When two paths suddenly intertwine

Mónika Baráth Adorján and her daughter Bori Adorján ran a family restaurant for many years, where Bori increasingly devoted her time to creating desserts. The feedback from guests and her passion for baking encouraged Bori to attend pastry school, enabling them to work professionally yet still in an artisanal way. 
Mónika, however, didn’t develop her love for homemade cakes in the restaurant but at home, where she delighted the family almost daily with sweet “dough” – as cakes are often called in Zala. Her first large-scale cake order came from a hotel in Hévíz, where she was tasked with creating edible Christmas gifts. While gingerbread might have been the obvious choice, Mónika and her family decided on a completely different idea. They revisited old family recipes and rediscovered a forgotten treat: honey gingerbread biscuits.
During the pandemic, when the hospitality industry came to a halt, the success of their homemade gingerbread biscuits led them in a new direction: the family closed the restaurant and founded the HoneySweet Workshop. Their goal wasn’t to run a traditional patisserie but to create a workshop where they could craft at their own pace, in their own style, without compromise.

Modern cakes and traditional pastries

Today, everyone in the workshop has their favourite activity: Bori specialises in modern cakes, tarts, macarons, and bespoke orders, while her mother, Mónika, focuses on traditional pastries – layered cakes, honey cream slices, flódni, or Gerbeaud slices.
Some of the recipes are cherished family heirlooms, passed down from great-grandmothers, aunts, grandmothers, or even from the recipe books of Mrs. Géza Ábrahám, which they’ve adapted to their own tastes. 
Every pastry contains a unique twist, something that makes it different, homely, and unmistakably HoneySweet.

The HoneySweet Workshop’s honey gingerbread biscuits are a journey through time: they bring back memories of a countryside grandma’s kitchen, and the spicy aroma of Christmas evokes the warmth of home. Coated in a snowy white icing, these biscuits captivate not only with their appearance but also with their flavour and texture. As soon as you take a bite, the crumbly dough almost melts in your mouth.
The secret to the HoneySweet Workshop’s honey gingerbread lies in their unique spice blend, crafted from eight aromatic spices.
Another key ingredient is honey, sourced from a local beekeeper in Gyenesdiás.
The team loves experimenting with their gingerbread biscuits, so you can occasionally try new flavours. Their latest innovation is made with wholegrain spelt and wheat flour.
This summer’s biggest hit in the gingerbread range was the lavender flavour, for which the lavender is grown, harvested, dried, and ground in the workshop’s own garden before being added to the honey dough.

Not a patisserie – but a family creative workshop

The workshop is not a traditional patisserie. The sweets are made to order and can also be found at the Hévíz Farmers’ Market. The personal touch of shopping is an essential part of their concept – whether it’s tasting at the market or a pre-arranged visit.

Honey gingerbread biscuits
The flagship product of the HoneySweet Workshop is their honey gingerbread biscuits, available in a variety of flavours. The dough is dense yet crumbly; it almost melts in your mouth after a bite. There’s no need to wait days for it to soften – these biscuits are soft from the start. The perfect texture comes from an old recipe: flour, sugar, margarine, eggs, sour cream, and bicarbonate of soda, along with their secret spice blend. This blend is their own creation, containing eight different spices.
Each biscuit is hand-shaped into a perfect round, placed individually on the baking tray, and after baking, they are coated in icing in large bowls before being laid out to dry – every single piece is handmade with care.
You’ll find both traditional and unique flavours among the options: plain, prune and rum, cranberry, candied orange, ginger (without icing), cocoa and chocolate chip, and seasonally, lavender.
